Food Service Department earns double gold award for audits at Bucyrus schools

The Bucyrus City School District’s food service department underwent a food audit by EcoSure, a subsidiary of Ecolab Solutions, earning a double-gold award at the Secondary School and a gold award at the Elementary School.

The food audits, which typically take place once a year, are completely random and grade the food department in two areas, food safety and safety and health. Safety and health focuses on the training of the staff in areas such as lifting procedures, chemical safety, burn prevention, etc, while the food safety section concentrates on temperatures, cooling and heating procedures, food safety training and more.

Auditors observe what the staff has been doing on a daily basis, checking the department’s records and logs to ensure they are up to date and accurate, calibrating thermometers for accurate readings, checking store rooms, freezers and refrigerators to make sure product is being rotated correctly, and finally questioning staff on their safety training knowledge. The complete audit, which can be up to a half-day process, reviews more than 60 areas in the food service department.

Once the audit is complete, schools are assigned to one of four categories: Superior (98-100), Good (94-97.5), Needs Improvement (90-93.5), and Unacceptable (89.5 or lower). “We received 99.5% percent on the food safety at the Secondary School and 102% percent on safety and health at both the Elementary and Secondary schools,” Bucyrus Food Service Director Lorie Pennington said. “Overall, I’m extremely proud of my staff, as this audit shows a positive reflection on the caliber of their work, as well as their continued dedication to our staff and our students throughout the school year.”
